{"id":1875,"date":"2020-04-29T22:59:45","date_gmt":"2020-04-29T20:59:45","guid":{"rendered":"http:\/\/mintetmenthe.com\/?p=1875"},"modified":"2020-10-27T20:58:40","modified_gmt":"2020-10-27T19:58:40","slug":"brioche-babka-a-la-fraise-fleur-doranger","status":"publish","type":"post","link":"https:\/\/mintetmenthe.com\/index.php\/2020\/04\/29\/brioche-babka-a-la-fraise-fleur-doranger\/","title":{"rendered":"Brioche babka \u00e0 la fraise &#038; fleur d&#8217;oranger"},"content":{"rendered":"<p>Pour la r\u00e9alisation de cette recette, je me suis inspir\u00e9e de celle de<a href=\"https:\/\/www.maryseetcocotte.com\/2017\/03\/20\/babka-au-levain-a-la-pate-a-tartiner\/\"> Maryse et Cocotte<\/a>, au chocolat.<\/p>\n<p><strong>INGR\u00c9DIENTS:<\/strong><\/p>\n<ul>\n<li>120 g de levain tout point ou 15g de levure fraiche<\/li>\n<li>400 g de farine semi compl\u00e8te<\/li>\n<li>6 g de sel<\/li>\n<li>130 g de lait ti\u00e8de<\/li>\n<li>60 g de sucre roux<\/li>\n<li>1 \u0153ufs<\/li>\n<li>130 g de beurre mou<\/li>\n<li>1 cs de fleur d&#8217;oranger, j&#8217;ai \u00e9galement ajout\u00e9 quelques gouttes d&#8217;huile essentielle de citron<\/li>\n<li>les grains d&#8217;une gousse de vanille<\/li>\n<li>du sucre perl\u00e9<\/li>\n<li>la moiti\u00e9 d\u2019un pot de confiture \u00e0 la fraise<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>RECETTE:\u00a0<\/strong><\/p>\n<p>Versez la farine, le sel, le levain, la fleur d&#8217;oranger, la vanille et le sucre dans le bol d&#8217;un robot, commencer \u00e0 m\u00e9langer, puis ajouter le lait petit \u00e0 petit.<\/p>\n<p>P\u00e9trir pendant quelques minutes, avant d&#8217;ajouter l\u2019\u0153uf. Lorsque celui-ci est bien incorpor\u00e9, ajouter progressivement le beurre en plusieurs fois.<\/p>\n<p>Continuer de p\u00e9trir jusqu&#8217;\u00e0 ce que la p\u00e2te se d\u00e9colle de la paroi et ne colle presque plus au doigt.<\/p>\n<p>Former une boule, couvrir et laisser pousser pendant 2H.<\/p>\n<p>Verser par la suite la p\u00e2te sur un plan de travail et abaisser \u00e0 l&#8217;aide d&#8217;un rouleau \u00e0 p\u00e2tisserie sur un grand rectangle dont la largeur est un peu plus grande que celle du moule.<\/p>\n<p>Badigeonner toute la surface de confiture, puis enrouler la p\u00e2te dans le sens de la hauteur.<\/p>\n<p>D\u00e9couper le boudin dans le sens de la longueur. Cette op\u00e9ration est un peu d\u00e9licate du fait de la texture de la brioche, ne pas s&#8217;inqui\u00e9ter si la coupe n&#8217;est pas franche.<\/p>\n<p>Tresser les deux boudins d\u00e9coup\u00e9s, et disposer dans un moule \u00e0 cake pr\u00e9c\u00e9demment bien beurr\u00e9.
