{"id":2895,"date":"2020-11-03T18:31:35","date_gmt":"2020-11-03T17:31:35","guid":{"rendered":"https:\/\/mintetmenthe.com\/?p=2895"},"modified":"2020-12-12T14:00:40","modified_gmt":"2020-12-12T13:00:40","slug":"tarte-au-citron","status":"publish","type":"post","link":"https:\/\/mintetmenthe.com\/index.php\/2020\/11\/03\/tarte-au-citron\/","title":{"rendered":"Tarte au citron"},"content":{"rendered":"<p><strong>P\u00e2te \u00e0 tarte fa\u00e7on Cyril Lignac (petite tarte, sinon augmenter les proportions) :<\/strong><\/p>\n<ul class=\"bu_cuisine_ingredients\">\n<li>15 g de poudre d\u2019amande<\/li>\n<li>30 g de f\u00e9cule de pomme de terre<\/li>\n<li>110 g de farine type 55<\/li>\n<li>50 g de sucre glace<\/li>\n<li>55 g de beurre pommade<\/li>\n<li>1 \u0153uf<\/li>\n<li>1 pinc\u00e9e de sel<\/li>\n<\/ul>\n<p><strong>Pour le cr\u00e9meux citron fa\u00e7on Christophe Michalak<\/strong><\/p>\n<ul class=\"bu_cuisine_ingredients\">\n<li>3 \u0153ufs<\/li>\n<li>150 g de sucre semoule<\/li>\n<li>150 g de jus de citron<\/li>\n<li>1 feuille de g\u00e9latine<\/li>\n<li>180 g de beurre<\/li>\n<\/ul>\n<p><!--more--><\/p>\n<p><strong>Pr\u00e9paration de la p\u00e2te \u00e0 tarte : <\/strong><\/p>\n<p>Dans un r\u00e9cipient, m\u00e9langer le beurre avec le sucre glace, la f\u00e9cule, la poudre d&#8217;amande, et la pinc\u00e9e de sel. Incorporer ensuite l&#8217;oeuf et la farine tamis\u00e9e. Laisser reposer la p\u00e2te au moins 30 minutes au r\u00e9frig\u00e9rateur et l&#8217;\u00e9taler sur un plan de travail farin\u00e9. Pr\u00e9chauffer le four \u00e0 175\u00b0C. Foncer un moule et piquer le fond \u00e0 a fourchette. Faire cuire au four pendant 15 minutes environ et laisser refroidir.<\/p>\n<p><strong>Pr\u00e9paration du cr\u00e9meux citron : <\/strong><\/p>\n<p>Faire chauffer le jus de citron, le sucre \u00e0 feu moyen, la g\u00e9latine ramollie dans de l&#8217;eau froide et essor\u00e9e, les oeufs, et amener le m\u00e9lange \u00e0 85\u00b0C. Laisser ensuite refroidir jusqu&#8217;\u00e0 4\u00b0C environ, puis ajouter le beurre petit \u00e0 petit, au mixeur. Laisser refroidir et verser sur la p\u00e2te cuite.
