{"id":3021,"date":"2020-12-02T17:08:54","date_gmt":"2020-12-02T16:08:54","guid":{"rendered":"https:\/\/mintetmenthe.com\/?p=3021"},"modified":"2020-12-02T17:09:58","modified_gmt":"2020-12-02T16:09:58","slug":"brioche-avec-un-coeur-de-ganache-au-chocolat","status":"publish","type":"post","link":"https:\/\/mintetmenthe.com\/index.php\/2020\/12\/02\/brioche-avec-un-coeur-de-ganache-au-chocolat\/","title":{"rendered":"Brioche avec un c\u0153ur de ganache au chocolat"},"content":{"rendered":"<p><strong>Ingr\u00e9dients:<\/strong><\/p>\n<ul>\n<li>400g de farine<\/li>\n<li>160mL de lait<\/li>\n<li>2 \u0153ufs<\/li>\n<li>65g de sucre<\/li>\n<li>65g de beurre<\/li>\n<li>16g de levure fra\u00eeche<\/li>\n<li>1 cc de sel<\/li>\n<li>150g de chocolat noir ou au lait selon vos gouts<\/li>\n<li>90g de cr\u00e8me fraiche liquide<\/li>\n<\/ul>\n<p>Commencer par pr\u00e9parer la ganache au chocolat. Pour ce faire, hacher le chocolat, et verser par dessus la cr\u00e8me liquide port\u00e9e \u00e0 \u00e9bullition. Bien homog\u00e9n\u00e9iser avec une cuill\u00e8re, et verser dans des empreintes ou un moule \u00e0 gla\u00e7on pour avoir 8 portions de chocolat. Placer au r\u00e9frig\u00e9rateur pendant le reste de la recette.<\/p>\n<p>Dans le bol d\u2019un robot, battre les \u0153ufs, le lait, le sucre et le sel puis verser la farine et la levure. P\u00e9trir pendant environ 5 minutes \u00e0 vitesse lente, puis 5 minutes suppl\u00e9mentaires \u00e0 vitesse rapide.<\/p>\n<p>Incorporer ensuite le beurre mou coup\u00e9 en morceaux, et p\u00e9trir \u00e0 vitesse lente jusqu\u2019\u00e0 obtention d\u2019une p\u00e2te qui se d\u00e9tache bien des parois.<\/p>\n<p>Laisser ensuite lever pendant 2H \u00e0 temp\u00e9rature ambiante ou la nuit au frais, dans un saladier recouvert d\u2019un papier sulfuris\u00e9.<br \/>\nEnsuite, d\u00e9gazer la p\u00e2te, puis la diviser en 8 parts de poids \u00e9gaux. Aplatir chacun des petits p\u00e2tons, puis disposer au centre une part de ganache avant de refermer d\u00e9licatement la p\u00e2te, et former de jolies boules de p\u00e2tes.<\/p>\n<p><img
