{"id":3606,"date":"2022-02-07T12:02:26","date_gmt":"2022-02-07T11:02:26","guid":{"rendered":"https:\/\/mintetmenthe.com\/?p=3606"},"modified":"2022-02-07T12:02:26","modified_gmt":"2022-02-07T11:02:26","slug":"choux-a-la-creme-saveur-rose-et-coulis-de-framboise","status":"publish","type":"post","link":"https:\/\/mintetmenthe.com\/index.php\/2022\/02\/07\/choux-a-la-creme-saveur-rose-et-coulis-de-framboise\/","title":{"rendered":"Choux \u00e0 la cr\u00e8me saveur rose, et coulis de framboise"},"content":{"rendered":"<p><strong>Cette recette comporte plusieurs \u00e9tapes:<\/strong><\/p>\n<ul>\n<li>Pr\u00e9paration d&#8217;une cr\u00e8me p\u00e2tissi\u00e8re (\u00e0 utiliser au sein de la cr\u00e8me diplomate), <strong>la veille du dressage des choux ou au moins 3H avant,<\/strong><\/li>\n<li>Pr\u00e9paration du craquelin et des choux<\/li>\n<li>Pr\u00e9paration de la cr\u00e8me diplomate<\/li>\n<\/ul>\n<p><strong>Ingr\u00e9dients pour une douzaine de choux de taille moyenne:<\/strong><\/p>\n<p><strong>P\u00e2te \u00e0 choux (selon la recette de Christophe Michalak) :<\/strong><\/p>\n<ul>\n<li>110 g de farine<\/li>\n<li>100 g d\u2019eau<\/li>\n<li>100 g de lait<\/li>\n<li>90 g de beurre doux<\/li>\n<li>4 oeufs<\/li>\n<li>1 pinc\u00e9e de sel<\/li>\n<li>1 pinc\u00e9e de sucre vanill\u00e9e<\/li>\n<\/ul>\n<p><strong>Craquelin:<\/strong><\/p>\n<ul>\n<li>100 g de cassonade<\/li>\n<li>100 g de farine<\/li>\n<li>80 g de beurre<\/li>\n<\/ul>\n<p><strong>Cr\u00e8me diplomate \u00e0 la rose:<\/strong><\/p>\n<ul>\n<li>2 feuilles de g\u00e9latine de 2g<\/li>\n<li>40 g de jaunes d\u2019oeufs<\/li>\n<li>75 g de sucre en poudre<\/li>\n<li>25 g de ma\u00efzena<\/li>\n<li>1 gousse de vanille<\/li>\n<li>250 ml de lait entier<\/li>\n<li>200 ml de cr\u00e8me liquide enti\u00e8re tr\u00e8s froide<\/li>\n<li>1 \u00e0 2 gouttes d\u2019huile essentielle de g\u00e9ranium rosat: je vous conseille de commencer par une goutte et d&#8217;en ajouter \u00e9ventuellement une suppl\u00e9mentaire, selon votre gout<\/li>\n<\/ul>\n<p><strong>Coulis de framboise: <\/strong><\/p>\n<p>15 cL de coulis de framboise<\/p>\n<p><strong>Pr\u00e9paration de la cr\u00e8me p\u00e2tissi\u00e8re pour la cr\u00e8me diplomate: <\/strong><\/p>\n<p>Mettez les feuilles de g\u00e9latine \u00e0 ramollir dans un grand volume d\u2019eau froide.<\/p>\n<p>Dans un bol, fouettez les jaunes d\u2019\u0153ufs avec le sucre en poudre pour faire blanchir le m\u00e9lange. Ajoutez la ma\u00efzena puis fouetter \u00e0 nouveau.<br \/>\nFaites bouillir le lait avec la graine de vanille fendue.<\/p>\n<p>Versez le lait sur les \u0153ufs et fouettez vivement en m\u00eame temps. Reverser le tout dans la casserole et faites cuire jusqu\u2019\u00e0 \u00e9bullition en remuant constamment.<\/p>\n<p>Versez la cr\u00e8me p\u00e2tissi\u00e8re dans un plat, \u00f4tez la gousse de vanille et ajoutez la g\u00e9latine ramollie et bien essor\u00e9e. Remuez et filmez au contact.<br \/>\nCette cr\u00e8me est \u00e0 r\u00e9server au frais au moins 3h.<\/p>\n<p><strong>Pr\u00e9paration du craquelin:<\/strong><\/p>\n<p>Dans un saladier, m\u00e9langez la farine, le sucre et le beurre jusqu&#8217;\u00e0 obtenir une p\u00e2te homog\u00e8ne. Placez le craquelin entre deux feuilles de papier sulfuris\u00e9 et \u00e9talez finement (2 ou 3 mm).<br \/>\nGr\u00e2ce \u00e0 un emporte-pi\u00e8ce circulaire, d\u00e9taillez des ronds d\u2019un diam\u00e8tre similaire aux futurs choux (4 \u00e0 5 cms pour obtenir des choux de taille moyenne). Placez ensuite au cong\u00e9lateur, le temps de r\u00e9aliser les choux.<\/p>\n<p><strong>Pr\u00e9paration des choux:<\/strong><\/p>\n<p>Dans une casserole, versez les liquides (eau et lait), et ajoutez le sucre, le sel et le beurre coup\u00e9 en d\u00e9s. Faites chauffer sur feu doux, afin de faire fondre le beurre et faire fr\u00e9mir les liquides. Sortez la casserole du feu et ajoutez la farine en une seule fois. M\u00e9langez avec une cuill\u00e8re en bois.<\/p>\n<p>Lorsque la farine est bien m\u00e9lang\u00e9e avec les liquides, replacez la casserole sur feu doux pour \u00ab dess\u00e9cher \u00bb la p\u00e2te : la p\u00e2te doit se d\u00e9coller des parois et commencer \u00e0 laisser des traces au fond (cela prend quelques minutes, sans cesser de remuer avec la cuill\u00e8re en bois). Placez la p\u00e2te dans un saladier.<br \/>\nAjoutez les \u0153ufs, un par un et en m\u00e9langeant bien \u00e0 chaque fois.<\/p>\n<p>Pr\u00e9chauffez le four \u00e0 240\u00b0 C, chaleur statique (haut et bas).<\/p>\n<p>Une fois la p\u00e2te pr\u00eate, la versez dans la poche et \u00e0 dresser les choux avec une douille unie, et sur une feuille de papier sulfuris\u00e9, en quinconce.<\/p>\n<p>Sortez la plaque de craquelin du cong\u00e9lateur. D\u00e9collez les pastilles congel\u00e9es et d\u00e9posez les sur les choux avec une l\u00e9g\u00e8re pression pour les faire adh\u00e9rer.<\/p>\n<p>Placez les choux dans le four tr\u00e8s chaud, que vous \u00e9teignez. Ils vont alors commencer \u00e0 gonfler pendant 20 minutes. Dans un second temps, rallumez le four sur 180\u00b0 C pour 20 minutes.<\/p>\n<p><strong>Pr\u00e9paration de la cr\u00e8me diplomate:<\/strong><\/p>\n<p>Une fois la cr\u00e8me p\u00e2tissi\u00e8re bien refroidie, fouettez la quelques instants pour qu\u2019elle retrouve sa souplesse. Ajouter l&#8217;huile essentielle.<\/p>\n<p>Montez la cr\u00e8me liquide enti\u00e8re tr\u00e8s froide en chantilly.<\/p>\n<p>Incorporez d\u00e9licatement la cr\u00e8me fouett\u00e9e \u00e0 la cr\u00e8me p\u00e2tissi\u00e8re. Versez la cr\u00e8me dans une poche \u00e0 douille.<\/p>\n<p><strong>Dressage des choux:<\/strong><\/p>\n<p>Taillez chaque choux en deux, afin de pouvoir les garnir.<\/p>\n<p>Garnissez les avec la cr\u00e8me diplomate, en prenant soin de laisser une petite cavit\u00e9 au centre pour le coulis. Versez un peu de coulis \u00e0 la framboise au centre, et replacez la partir haute du chou.<\/p>\n<p>Bonne d\u00e9gustation!<\/p>\n<p><img data-attachment-id=\"3613\"
